I love ordering egg bites from Caribou Coffee. Oooh they have perfected that recipe. But as per usual, I wanted a look and taste alike recipe that was Trim Healthy Mama friendly. These Instant Pot egg bites did just the trick. Let me tell you, they come awfully close to the Caribou Coffee version! You are going to love the gouda and bacon combination! Nothing quite beats the ease of waking up and throwing a couple of these delightful bites into your mouth as a simple and easy breakfast.

Sous Vide Egg Bites
Have you ever heard of Sous Vide eggs? I had not either until I started researching copy cat recipes for the Caribou Coffee Bacon Gouda Souffle egg bites. For those that don’t have a Caribou Coffee around, these would be similar to a the Starbucks egg bites. So what do they contain? They are a combination of cottage cheese, eggs, Monterey Jack cheese, and bacon! Quite honestly they make the perfect Trim Healthy Mama recipe. Full of healthy and delicious fats.
For this recipe, we are going to duplicate a similar recipe to the Starbucks Sous Vide eggs. However, I was more interested in creating something that tasted similar to the Carbiou Coffee Bacon Gouda Souffle, which will taste a little bit different than starbucks.
Egg Bites in a Instant Pot
If you are looking for egg bites instant pot recipes, you have came to the right place, because I have the best recipe that I have found! We are going to make it in the Sous Vide way with an Instant Pot and I think you will find that the texture, taste, and infusion of ingredients is spot on.
One of the reasons that I love the Caribou Soufflés is because of the perfect pairing of ingredients that create a healthy greasy taste. “Healthy greasy taste,” is that a thing?! I’m going to stick with it, because that’s the best way I know how to explain it! You get a healthy egg bite that tastes naughty!
That was one of my goals with this recipe! If you are looking for more recipes like the Instant Pot eggs bites that are tasty, low carb, and uses no sugar; check out the Free Healing Harvest Cookbook. You can also find more odd and fun breakfast ideas from my archive here!
Materials for Instant Pot Eggs Bites
There are two pieces of necessary kitchen utensils for this recipe. You will need a Instant Pot or similar pressure cooker of your choice, and a Egg Bites Silicon Pan. I like this silicon egg bite pan because it comes with a cover so I can just place them in the refrigerator as is.
Can you stack silicone egg molds in instant pot?
Yes! You can stack the molds. I have not done so yet, but it is a common practice to cover with aluminum foil and gentle stack them on top of each other. I would recommend getting a sling if you are going to do this. The sling can also come in handy when you are making Instant Pot Cheese Cake or other things that need to be lowered into the pot. Nana’s Kitchen has a easy 4 ingredient recipe for this!
How long do egg bites last in the fridge?
I would recommend that you do not keep these in the refrigerator for longer than a week. But trust me, they probably won’t last that long anyways. They are THAT good!
If you do keep these Instant Pot egg bites in the refrigerator, make sure that they are covered. If you leave them uncovered they will dry out.
Making Instant Pot Egg Bites
There’s a few other things that I should mention before I come to the full Instant Pot Egg Bites recipe. The first is that I LOVE using a immersion blender for this type of recipe. You might think I’m crazy, but I HATE cleaning my blender. It’s so clunky and there is so many parts. I know there are many people out there that just can’t get enough of using their favorite blender, but I am not one of those people! If you hate cleaning you blender, try this for your blending recipes!
Note: In the picture below I am not using gouda cheese like the recipe calls for.
Once you have everything blended together, you can fill your silicon baking pan up with the mixture. Don’t be afraid to go right to the top. Because of how the pressure cooker works, even if they puff up a little more, they will not spill over like you would expect in a oven or other heated cooking methods.
Are you ready to see what these Instant Pot Bacon Gouda Soufflés will look like?! You will cook these on manual in the Instant Pot for 10 minutes. Allow for heating up and cool down times. Make sure the Instant Pot is depressurized. And finally the grand reveal! Look at how beautiful these things are!
And guess what? These Instant Pot egg bites taste so close to the ones I was trying to copycat. Try them and let me know what you think over on Instagram!
