You can never have too many healthy cake recipes, right? There's something about chocolate cake that is a classic!
This no sugar chocolate cake is a cake for serious chocolate lovers. Dark chocolate lovers preferred, however anyone can enjoy it's rich and deep flavors.
It's also a chocolate cake for those that love a good moist cake, but also can appreciate a dryer texture. This cake will be so moist when you take it out of the oven. If you pour that chocolate glaze over it and eat it right away, I can attest to it's succulent softness. However, if you wait to eat it and place it in the refrigerator, be prepared for it to dry out a little bit. The top with become a bit more crunchy (just a little), and the inside will still be soft!
It's a very diverse cake as far as cakes go!

There sometimes seems like there is no limit to the number of natural sweeteners you can choose from.

How can I Sweeten a Cake without Sugar?
For this recipe, we are going to use Gentle Sweet from Trim Healthy Mama as our alternative sweetener. THM has some of the best products that I have found for adding taste and sweetness to your low-carb or sugar-free lifestyle. They really have learned how to harness the power of stevia in a way that doesn't leave a bitter aftertaste. There certainly are other natural sweeteners that you can choose from to sweeten a cake, but for this no sugar chocolate cake it makes the most sense to use a sweetener that will balance out the bitterness of unsweetened cocoa power without adding more bitterness!

What is the Healthiest Cake to Eat?
By now I'm sure you have figured out that I really like this no sugar chocolate cake! It's just THAT delicious! However, you may be wondering if there are other sugar-free cakes that I enjoy as well. Great question! I have to tell you that the inspiration for this recipe came from a number of sources. A few of which was in the Trim Healthy Table cookbook.
I wonder if you can guess the original recipe that I started playing around with? THMers can you guess it?! Alright I'll tell you. The Trim Healthy Table cookbook has a Butter Bundt Cake recipe (pg 300) that is the recipe that I make every year for Christmas morning. I started thinking this past Christmas that the recipe would taste great with chocolate!
After playing around with that recipe and a few zucchini cake recipes (like this one from Brianna Thomas), this no sugar chocolate cake was born and it's one of my favorite chocolate cakes ever! I also can't help but love the Bundt pan, which I think makes this cake look completely stunning!

Making a Sugar Free Glaze
One of the toughest parts of getting this cake right was making the glaze. This glaze is not your average no sugar chocolate cake glaze! Nope! It is going to use actual chocolate, which means that if you put it in the refrigerator, this cake will harden on top as the chocolate solidifies. This adds a nice texture to it in my opinion! If the cake does not already have ample air bubbles on top, you can poke holes in the cake for the chocolate glaze to seep into.
The Final Results of the No Sugar Chocolate Cake
This cake is best eaten right away after the glaze goes on, however you can refrigerate the cake for up to a week. Are you ready to give this cake a try! It is great for birthdays, valentines day, or other special occasions. I think the results were pretty tasty! - Coconut oil or spray for the pan
- 8 tablespoons (1 stick) softened butter
- 1 ¼ cup Gentle Sweet (or stevia substitute)
- 3 large eggs
- ½ cup egg whites
- 2 cups Baking Blend or Low Carb Baking Mix (see my recipe link below)
- 1 tablespoon baking powder
- ½ teaspoon mineral salt
- ¼ cup unsweetened cocoa powder
- 1 cup unsweetened almond milk
- ¼ cup heavy cream
- 2 tablespoons butter
- 2 tablespoons coconut oil
- 2.5 ounces unsweetened chocolate
- ¼ cup Gentle Sweet (or stevia substitute)
- Pre heat the oven to 350 degrees.
- Spray a Bundt cake pan (10 inches) well with coconut oil.
- With an electric mixer, cream together the butter and sweetener in a large bowl.
- Beat in the whole eggs and egg whites.
- Add almond milk and heavy cream and mix again.
- In a separate bowl add the Baking blend of Low Carb Baking Mix (link below), baking powder, salt, and cocoa powder.
- Add the wet and dry ingredients together and mix well.
- Scrape the batter into the Bundt cake pan and smooth the top with a spatula.
- Bake for 40 minutes. Let cool completely.
- Meanwhile make the glaze.
- Melt the butter, coconut oil and chocolate together in a small sauce pan. Alternatively you can melt in the microwave in a Pyrex or glass container.
- Add the Gentle Sweet (or stevia alternative) and mix well.
- Pour over the top of the cake.
- The glaze will harden if left out too long, so make sure to pour it over the top of the cake while it is still warm.
- This cake is best eaten right away. If you leave it in the refrigerator for too long uncovered it will harden and dry out.
