It’s cheesy, healthy and delicious!And while I was at it, I decided it might as well be a low carb chicken broccoli casserole as well. Much to my surprise, the very first attempt at a healthy chicken broccoli casserole was a smashing success. From the toddler to the baby, and up to the grown man; they all loved it!

Easy Chicken Broccoli Casserole
I’m starting to see the slightest indications that the autumn season is coming. Apple Orchards are reeving up, schools are started, temperatures have dropped in the evening, Etsy shops are selling the most adorable pumpkins in the world (check these out!), and I’m getting a hankering for some simple casseroles for the coming winter months. This low carb broccoli casserole is simplicity at it’s finest. And I still can’t believe that I haven’t had to change even one part of the recipe yet. It was just that good!
One of the easy parts of this healthy chicken broccoli casserole is that the three cups of chicken that were used came from the leftover rotisserie chicken I had picked up for dinner the night before. The other easy part is that you can throw all the rest of the ingredients in the same casserole dish, mix it up, and throw it in the oven! Wala! Complete. You can’t get much easier than that!
How to Make a Low Carb Casserole Crispy
If you have never heard of the secret ingredients to making a healthy crunchy topping for your low-carb casserole, then I am about ready to change your life. In steps Wasa Crackers! The ideal crisp in this recipe comes from the Wasa crackers. They are a rye cracker that although lack flavor, can be used in combination with flavor to produce a yummy snack or alternative to higher carb crackers.
For those following Trim Healthy Mama, you can have one of these for a S- snack. So in this case I used 3 crackers, placed them in a baggie with an entire cup of cheese and smashed it. At the very least this recipe can provide a bit of stress relief after a day at work! Let the cracker smashing begin! Then I sprinkle the mixture over the top of the casserole. The crackers and cheese melt together into a perfectly delectable, caramelized topping. Yummy!
Low Carb Casseroles
Did I mention that this casserole was gobbled up by my entire family? My ENTIRE family. That is a feat that does not happen often. You might just have to try this recipe to see if you can replicate my results. After all, to get a grown man, toddler, and baby to all eat and enjoy a dish isn’t very often! There might just be something to this low-carb chicken broccoli casserole to make that happen!
