There’s something about spring that stirs the soul. The earth awakens, stretching out beneath the warming sun, and here on the homestead, new life is everywhere. The chickens, after their winter rest, have started laying again—tiny miracles in shades of cream and brown, tucked safely in the nesting boxes. We also have one very old chicken that still lays beautiful greenish eggs, which is always a joy to see.
Our new ducks waddle around, quacking their cheerful good mornings. The piglets are growing fast, but they are not yet here, we are waiting for them to be big enough to part from their mama. However, we are excited to expand their enclosure area and get them home rooting through fresh green grass. We also have a flock of chickens preparing to join the big coop.
And the garden—oh, the garden! It’s a vision of promise. Fresh asparagus and fresh herbs are some of the first signs that the growing season is truly here, ready to bring fresh flavors to our kitchen. I’m not seeing any signs of them sprouting yet, but I’m sure it’s coming!
Amidst it all, I find myself moving a little slower, carrying life in more ways than one. Baby number five will be here any day now, and the anticipation is thick in the air. My hands are full, my heart is fuller, and this season of motherhood, homesteading, and waiting is one I want to savor. It’s the perfect time to slow down, soak in these moments, and enjoy the simple blessings that come with this time of year, including cooking in the spring kitchen.
The Spring Kitchen
With spring comes not just new life outside, but fresh inspiration in the kitchen. There’s something about these crisp mornings that call for hearty, nourishing breakfasts—meals that gather little hands around the table, fill growing bellies, and prepare us for the work ahead. The recipes that I’m going to share are mostly just practical recipes for a growing family but don’t be afraid to use them for the spring bunch season like Mother’s Day, baby showers, or Easter Sunday. Whether it’s a busy morning or a slow Sunday morning, these easy brunch recipes offer a great start to the day.
Sourdough Sandwich Bread
My einkorn sourdough sandwich bread is the foundation of so many of our spring breakfasts.
Whether paired with a hardboiled egg and a thick slab of butter or used to soak up warm, golden yolks, this bread is a staple. My kids love it for its softness, a gentle contrast to the more rustic sourdough loaves I sometimes make.
The original recipe calls for whole wheat einkorn, but today, I’m working with all-purpose einkorn, adjusting the ratio just a bit—six cups of flour instead of eight and slightly less water. The soft texture makes it a natural partner to sweet and savory options alike, from peanut butter and fresh fruit to crispy bacon and fresh veggies. When lightly toasted, it has the perfect balance of a golden crusty bread exterior with a tender inside.
Cottage Cheese Egg Bake
Eggs are in abundance now, and I’m always looking for ways to pack in even more protein. Cottage cheese in an egg bake may not be new, but it sure is delicious! I’ve actually been seeing this little hack across social media lately and I sure do think it’s a great way to get more protein into a meal.
My husband was just rummaging through our pork freezers recently and came upstairs quite upset that we were getting so low! We were not able to get local beef this year so our homegrown pork went fast. I’m using this cottage cheese hack to reduce the amount of ground pork I need but still elevate the protein levels, which keeps my busy boys fuller longer!
Creamy, fluffy, and packed with healthy fats, this bake is an easy way to fuel our mornings. It’s a great option for meal prep since it keeps well in the fridge and is quick to reheat. I like to add fresh herbs, spring onion, and even a little bit of parmesan cheese for extra flavor. Pair it with some breakfast potatoes roasted with olive oil and red onion, and you’ve got a real knockout of a breakfast.
Puff Pancake
Typically, puff pancakes are a spring breakfast idea classic, but in our home, they’ve found their way into homeschool lunches. There’s something special about pulling a golden, puffed-up pancake from the oven after a long morning of lessons. The boys love it, and I love that it’s protein-packed, thanks to our spring eggs.
It’s a simple way to make a hearty breakfast, and with some fresh strawberries, extra blueberries, and a drizzle of maple syrup or honey, it becomes a delightful treat. This is one of those traditional recipes that never fails to bring smiles to our table. We were low on a lot of staples in our home on this particular day, but we still had many jars of the honey we spun last fall, so the boys enjoyed lots of local homespun honey on their einkorn puff pancake. I found it so fun that I was serving them farm-fresh eggs, ancient grains, and local honey.
If you do make a puff pancake the type of flour will affect the amount of ‘puff’ that you get. Einkorn is an ancient grain and it just does not give the type of ‘puff’ that traditional flour gets. My kids love watching a puff pancake puff up so I do often use half traditional flour and half einkorn flour. I also often ferment the grains overnight with kefir to make the grains more gentle on our digestive system.
Homemade Granola
Granola has been a staple in our home for over a year, and it’s the perfect grab-and-go breakfast on busy mornings. My oldest is actually the greatest consumer of our homemade granola and eats it for breakfast and snacks whenever he can!
I use my granola bar recipe as a base, swapping ingredients depending on what we have. Mondays and Tuesdays are often our rush-out-the-door days, whether for homeschool co-op or work, and this simple breakfast keeps us fueled.
Wyatt has been requesting extra honey lately, so today, I’m giving it a bit more sweetness. A little bit of warm spices like cinnamon can make it even more special. Sometimes, I mix in chia seeds for added nutrition. I typically add in unsweetened coconut flakes and our homemade vanilla extract, which I love the outcome of. I’ve also heard that it’s very easy to soak the oats prior to making it which gives it some added digestive benefits. It’s on my list to try, but I haven’t quite got there yet!
This recipe is easily stored in a large mason jar, but I’ve been using these Flip Tite Square Storage containers, which I really have found convenient for the pantry.
Sourdough French Toast
By the end of the week, any leftover sandwich bread finds new life as sourdough French toast.
Saturday mornings are meant for slow, sweet starts, and this recipe has often been our tradition. Thick slices of bread, soaked in rich eggs and milk, cooked to golden perfection, and topped with a drizzle of maple syrup or honey—it’s a meal my boys request again and again.
It is one of the best ways to use up older bread in an easy way that tastes delicious. Usually, the butts of my bread loaves go in the freezer and those make great bread cubes for sourdough stuffing at Thanksgiving or just as a fun meal.
If you are ever looking for a spring brunch spread, I love making a French toast casserole with a creamy sauce and fresh berries. However, on this day, I was more focused on engaging my kids in the kitchen and getting them to help out with the process. It was a beautiful Saturday family breakfast.
