There’s something about the cold days of fall that makes you want to slow down, even when life refuses to. The mornings here have turned misty and crisp — the trees are glowing orange and red, the ducks and geese are waddling through puddles, and inside, we’re leaning into all things cozy. I’ve been pulling out my warmest mugs, lighting candles, and baking again.

This time of year, I love to prepare for the week ahead on Sunday evenings. It’s a little ritual. On this particular day, I write out my menu plan, set my brown bread to rise overnight, and get my kefir ready to ferment for the week. It’s one of those “pockets of peace” that makes Monday morning feel a little less wild. There’s something deeply satisfying about knowing breakfast is ready before the sun even rises.

I especially find this helpful as a working mom, even if I take 20 minutes on Sundays to prepare a few things for the upcoming work days, I find my stress level down as I’m rushing everyone out the door on Monday and Tuesday.

Monday – Sourdough Brown Bread & Hard-Boiled Eggs

Mondays are our homeschool co-op days, which means they start early — often before the sun is up. I usually have my cup of coffee while reading my Bible, savoring those quiet minutes before the house wakes up.

This week, I had a beautiful loaf of Sourdough Brown Bread rising overnight. It over-fermented a bit, but instead of tossing it, I just baked it in bread pans instead of letting it hold its own shape. That’s something I’ve learned over the years: sourdough mistakes are rarely the end. There’s almost always a way to save it.

To go with it, I made my Easy Peel Instant Pot Hard-Boiled Eggs. They’re one of my favorite ways to get protein on the table fast, especially for busy mornings. Pair that with a little cream cheese or butter, and you’ve got a healthy breakfast idea that’s filling and fast.

Tuesday – Einkorn Protein Bagels

Tuesday mornings are my “into the office” days, so they’re all about quick breakfasts. I made a batch of my Two-Ingredient Einkorn Bagels; they have some protein in them because of Greek Yogurt and are made with simple, wholesome ingredients.

We toasted them, added some cottage cheese or nut butter, and served them with fresh fruit for a great start to the day.

Einkorn is one of my favorite whole grains to bake with because it’s gentle on digestion and adds such a nutty flavor. These bagels are easy to customize; sometimes we top them with a sprinkle of sea salt or use them as a base for breakfast sandwiches with eggs and cheese. On this day, I was out of my Everything Bagel seasoning, so I just used some sesame seeds, and the boys enjoyed them with cream cheese.

Wednesday – Cottage Cheese Egg Bake

Wednesdays are a little slower since we don’t have to be anywhere, but with a playdate planned with my cousin and her kids, we were still in that “rush, but not panicked” mode.

While the boys finished handwriting practice, I popped my Easy Cottage Cheese Egg Bake into the oven. It’s loaded with healthy fats, whole eggs, and a good dose of protein — perfect for busy mornings when you still want a hearty meal.

I love savory breakfasts like this one, especially when I can sneak in bell peppers or spinach, except for the fact that I didn’t have any of that on this particular day, so we just went with what we had instead of stressing about adding veggies. I ended up adding some extra fats like butter and cheese to it because I was hoping that would satisfy my boys a bit longer today, because of our playdate.

The extra fats made it super delicious. It’s one of those healthy breakfast recipes that feels like a brunch dish but is simple enough for a weekday.

Thursday & Friday – Homemade Granola & Cozy Cranberry Wassail

By Thursday, I could tell something was off, sniffles started, and by Friday, all five boys were down with colds. So we slowed things way down. I was going to film a different breakfast on Friday, but things just got so off that I ultimately had to choose the next faithful thing (go see the YouTube video from two weeks ago for reference), and that honestly was my family and leftover breakfasts from the last few days.

While the boys watched a show and snuggled under blankets, I simmered my first batch of Cranberry Wassail for the season. I added a handful of elderberries for a little immune boost. The smell alone was worth it — cloves, orange, and cinnamon filled the house. It’s the perfect drink for cold, cozy mornings.

I love keeping a Dutch oven filled with wassail throughout the winter months. Whenever we are done with it, I put the entire thing back in the fridge. I’ll add additions to it throughout the day, and about once a week, I’ll drain everything and start over with the concoction. The smell is soothing, and the immune boost is well worth it.

But on Thursday, I still had a meal to make, and breakfast turned into comfort food: homemade granola with milk, using my Healthy Granola Bars recipe as the base. The only difference from the recipe is that I leave out the chocolate chips and lay everything flat on a baking sheet or pan. Bake at 250°F for about an hour, stirring occasionally. If you leave it in the oven a bit longer, it crisps up beautifully.

Sometimes we serve it over yogurt, but on Thursday and Friday, it was just with milk, simple and sweet.

Real Life Fridays

By the end of the week, my breakfast meal plan didn’t go exactly as written — and that’s okay. Real life happens. Between sick kids and work deadlines, we leaned on leftovers for the rest of the week with warm mugs of wassail and extra slices of brown bread.

That’s the beauty of homemaking — it’s not about perfection; it’s about care. Whether it’s any of these recipes or something as simple as a cup of coffee shared around the table, these little rhythms anchor our days.
